Step 1: Take a nice-looking gourd from your garden. Try to find one that sits flat, or that you can make sit flat with a few quick cuts on the stem.

2. Using an extremely sharp crafting or whittling knife, cut off the top of the gourd (the blossom end) and remove the seeds to plant next year. Remove the softest ball of tissue in the middle making a spherical cavity

3. Put the gourd in the oven at 100˚ for half an hour*

4. Scrape out the rest of the tissue: it should have become soft enough to do so with a spoon and your fingers, while the exterior of the gourd should be drier and harder. I used this part of the gourd for dinner tonight, mashed with salt, pepper, butter, and maple syrup.

5. Wash out the remaining bits and bobs

6. Dry the gourd for another hour in the oven*

7. Stick a candle in it, and it will do the rest of the drying for you over the course of an evening!* The drier they get, the more light shines through.

*It’s important that most of the drying takes place sans-wet tissue, as I learned from two failed attempts today. The wet tissue distorts the shape of the gourd as it dries. Try to scrape out as much as possible before really drying it out.
